
After being thoroughly washed in RO water, fresh coconut meat is grated and pressed to extract coconut milk (also known as coconut cream). The coconut milk is swiftly packaged in bags, and immediately frozen at minus 450C, a critical step that prevents the formation of microorganisms. It is subsequently stored in cold storage at -20°C to be ready for container loading.
Once defrosted, the coconut cream is widely used in the confectionery industry and for various culinary purposes, such as making coconut jelly, cakes, candies, curry dishes, and other food preparations.
