After washed in clean water, coconut meat is grated and pressed to derive Coconut cream (Coconut milk).
Coconut cream is pasteurized by irradiation, then packed in plastic bags, and they are immediately frozen at minus 45 degree Celsius to prevent the formation of microbial agents before kept in cold storage at minus 20 degree. The production process is highly mechanized with modern machines.
After unfrozen, Coconut cream is widely used in confectionery industry or cooking, e.g. making coconut jelly, cakes, candies, curry dishes and other preparations.
